Food for Fuel: Spicy Orange Stir-fry
I always try to get a lot of vitamin C, but because I have a cold, it’s even more important this week. What’s For Dinner? made getting vitamin C easier for me by making oranges this week’s Blogger Secret Ingredient. Nice job on the apt ingredient!
I was trying to get a lot done yesterday evening, so I needed a quick dinner. I threw this stir-fry together in minutes (although my rice took longer to cook). I didn’t do much measuring, so please forgive me for such an inaccurate recipe. Basically, I threw the following in a skillet:
- Frozen Asian blend veggies (these went in first and I waited until they thawed before throwing in the rest)
- ~1 TB chopped fresh ginger
- 1 clove garlic (chopped)
- Sliced mushrooms
- Baked tofu
- Pre-cooked chicken
- Sesame oil
- Soy sauce
- House of Tsang Classic Stir-fry sauce
- ~1/3 tsp. crushed red pepper flakes
- Orange zest (just grated part of my orange peel over the skillet)
Towards the end of cooking, I added:
- Chopped scallions
- An orange, divided into sections, each section cut in half
I stirred it all together and served it over short-grain brown rice.

I’m angry about this picture. I took two more and they were so much better, but they wouldn’t transfer to my computer. Hope nothing is wrong with my camera!
Anyway, I really enjoyed this stir-fry. I was a little apprehensive about mixing the orange with spicy flavors and vegetables, but the complemented each other beautifully. I hope the huge amount of vitamin C in this dinner helps my cold.

This looks– or would look, if the picture had come out better– like a dish they serve at my favorite local Asian-inspired vegan restaurant (only minus the chicken). I’m very impressed. And I’m pretty sure that orange zest has tons of concentrated cold-fighting power.
