Food for Fuel: Stir-Fry with Tahini Yogurt Sauce

I decided to try actually cooking something for lunch yesterday, since I basically survive off sandwiches for dinner if I end up working until 9 pm. So, I made a stir-fry, making extra brown rice and baked tofu for a quick meal later.

The stir-fry was a simple combo of brown rice, frozen vegetables, and baked tofu. I decided to make a tahini dressing.

Tahini Yogurt Sauce (sorry about the very imprecise measurements)

1 big spoonful tahini
1 big spoonful plain yogurt
1/2 clove garlic, minced
Squirt of lemon juice
Crushed red pepper flakes to taste

Blend all ingredients in a food processor. You could probably just stir them together if you don’t have one, just be sure to chop the garlic into very small pieces.

I mixed some of the dressing into the rice and added the rest to the top of the bowl.

    It’s good to know there is something else you can do with tahini besides homemade hummus! I keep a bottle of tahini in my pantry at all times (and a fresh bowl of hummus in my fridge at all times!) but I’ve never known what else I could use it for. Thanks for the recipe!
