Food for Fuel: Smoked Salmon and Poached Egg Sandwich

I apologize for the lack of cooking posts lately. I’ve been less motivated to try new recipes. I’m still cooking, but I’m repeating a lot of dishes already on the blog because I’ve been lazy and uncreative towards food. Also, my dinners are sandwiches that I may or may not get to eat at work. 

I started reading Julie and Julia a few days ago. I know you’ve all gone out and seen the movie without me, so don’t tell me anything about it because I like the book and must finish before I see the movie. Anyway, I related to Julie; being bored at a desk job and looking forward to finally going home and preparing a wonderful meal. I had enough time at work to plan those meals and look up new recipes.

But now I don’t have a boring desk job, so while I still enjoy cooking, it’s not a motivating factor in my day. I consider this a good thing, but unfortunately the blog will suffer slightly. I’ll still cook and continue to post recipes, but not as many. Don’t worry, I won’t be able to stay away from the cookie dough. Those recipes will be a constant. ;)

Ummm…back to yesterday’s lunch. There’s actually a meal like this somewhere on the blog, but I’m going to share anyway. I needed to make bread because I was out and if I didn’t bake it, I wouldn’t have any to make a sandwich for work. I had another recipe picked out, but it was going to take far too long. So, I made Zesty Cook’s Quick and Easy Whole Wheat Bread, which I have made before.

This time I substituted rye flour for 1 cup of the whole wheat and added 4 tsp. of vital wheat gluten. The results were wonderful.

I decided to use the bread for lunch and dinner. For lunch, I sauteed asparagus, garlic, mushrooms, and green onions and added spinach until it wilted. I topped the warm veggies with fat free mozzarella and feta cheese. I topped the bread with a smear of Dijon mustard, smoked salmon, and tomatoes. I put the veggies on top of the salmon and tomatoes.

Next, I poached one egg and an egg white in my microwaveable poacher. I put the eggs on top of the open-faced sandwich.

  • what is a microwave poacher??? i don’t think i have ever had a poached egg. i’m a little scared of them. what is a selling point? so cool you make your own bread. maybe i should put this on my life list. i haven’t seen the movie either. maybe i should read the book!

    Lacey: It’s just a plastic thing that I got at some home goods store. I keep overcooking them. The selling point is a nice solid egg white with a slightly runny yolk.
