Food for Fuel: Wheatberry, Tofu, and Crab Stir-fry

Last night I didn’t pack a sandwich for work.  I didn’t think I would be there until 9 and…I’m tired of sandwiches.  It was still well past “normal people” dinner time when I got home, so I quickly threw a bunch of stuff from the fridge/freezer into a skillet.

Into the skillet: sesame oil followed by frozen veggies (an Asian blend from Target).  Next up was leftover baked tofu, imitation crab meat (made from Alaskan pollock, also from Target), minced garlic from a jar, more sesame oil, stir fry sauce, and chile garlic sauce.

Next I added leftover cooked wheatberries and egg whites from a carton. I stirred just until the wheatberries were warm and the egg whites became solid.

It made a huge pile of food in less than 10 minutes. In fact, I wasn’t even going to photograph this, but it turned out delicious.
