Food for Fun: Espresso Shortbread and Blue Ribbon Cookies

I do actually have some healthy Bittman recipes to share with you, but I figured you needed a break from watching me totally rock that challenge.  It’s Saturday, after all, so have some cookies.  I made these last weekend for MSB because he has tests and lots of studying coming up, and also for my sister because she sent me her mailing address specifically for me to send cookies. Ha.

Espresso Chocolate Shortbread

I have never made shortbread before and now I might never try another shortbread recipe.  These are too good!  Any other shortbread would be a disappointment, I’m sure. 

I made these as directed (recipe is linked in title), except I didn’t have toffee-flavored chocolate like Smitten Kitchen and just used a bar of Ghirardelli Bittersweet.

These contain caffeine from the espresso, so I figured they would be good studying snacks.  I also think they’re the reason I couldn’t sleep last night.

Blue Ribbon Fair Cookies

Yes, another chocolate chip cookie recipe, but these ones are prize-winning!  They taste like it too.  They are fat and soft…mmm…
