Bittman Challenge: Poached Fish, Couscous, and Cobbler

Finally I have a chance to show you the nice meal I made on Sunday.  A meal that poor MSB didn’t get to eat because he was throwing up.  (By the way, it’s Wednesday and I feel weird but I’m not nauseous.  Hoping that’s good.)

Poached Fish Steaks or Fillets with Vegetables

Just when I think I’m doing well on this challenge, I look at the long list of Essential Recipes in the Fish and Shellfish Chapter.  Apparently Bittman really likes fish.  I like fish too, but it’s pricey.  Thanks a lot, Mark.

Anyway, I bought a bag of frozen salmon fillets at the store and gave this recipe a shot.  Bittman says poaching is one of the best ways to cook salmon.  Here’s how I made his dish.  I used slightly different vegetables than him and used his wine variation.

3 tablespoons butter (I used an unmeasured scoop of Brummel and Brown)
1 green bell pepper, diced
1 onion, diced
1 carrot, diced
1 clove garlic, minced
Salt and pepper
3 small salmon fillets, thawed
1 cup white wine
1 cup chicken stock

Melt butter over medium heat in a Dutch oven or skillet with a lid.  Add the vegetables and garlic, sprinkle with salt and pepper, and cook until they soften.

Put the fish on top of the vegetables and add the liquid until it comes to the top of the fillet, but not over.  Bring to a boil, then cover and remove from heat.  Fish will be done in about 10 minutes.

This was amazingly easy and I think it would have been delicious if I used quality, fresh salmon.  It was decent enough though.  The wine added a nice flavor.

Simple White or Whole Wheat Couscous

I served the fish on top of whole wheat couscous, the last recipe I needed to make from the Grains chapter.  I’m not going to type out the super easy “recipe,” but I will tell you that it’s the same as the one on the back of the Near East whole wheat couscous box.  I love couscous and was excited to eat it again. 

Blueberry Cobbler

Recipe linked above.  Yes, blueberries are technically out of season, but they aren’t going to get in season before my challenge is over.  I used half fresh and half frozen for this recipe.  Again, this recipe is so easy! 

I made a half batch version by using a loaf pan.  I’m an idiot and accidentally used the whole egg, but it still tasted good enough.  Mine was a little soggy on one end.

Here’s the better looking side of the cobbler.  I ate the part with less crust.

I only mixed the berries with half the sugar called for and they were still very sweet.

Here’s the goopy part that I ate.  Still tasted good!  Needed ice cream though…
