Bittman Challenge: Soft-Boiled Egg

52 recipes down and 50 to go.  I’ve surpassed the halfway point!

It appears that Bittman likes eggs as much as he likes fish.  Yesterday I completed my third boiled egg recipe for this challenge. 

All you need for this is an egg and salt and pepper.  Just slowly lower the egg into gently boiling water, then adjust the temperature to a light simmer.  Cook for 4 minutes, then run under cold water. 

Don’t try to peel a soft-boiled egg–you should just crack it and then scoop it out.

I made two soft-boiled eggs for lunch yesterday and I must admit, they looked scary.  The whites…weren’t completely solid. *Shudder*

I put my trust in Bittman and used the eggs to top a leftover couscous mixture.

They continued to look scary and gross, but the eggs melted into the couscous and tasted great. 

My couscous mixture is a frozen blend of broccoli and other vegetables, sliced bell pepper and mushrooms, whole wheat couscous, curry powder, and avocado.
