Food for Fun: Ginger Chip Cookies
Here’s one of the Christmas cookies I made. This year I mixed two batches of cookies, baked half, and froze the other half. I gave a bunch away then baked the rest of the dough just before going home.
These ones are based on Heidi Swanson’s Sparkling Ginger Chip Cookies. I didn’t make them as small as she did and I made the mistake of using my favorite Ghirardelli bittersweet chips, which are large. I was just too lazy to finely chop a bunch of chocolate. So, mine have large chunks of chocolate instead of small delicate mini chips. They were still delicious.

i am so unadventurous with cookies/baking i guess as i would, yet again, never have thought to mix ginger and choc chips!

Hope it’s not freezing in Michigan. But that would be unlikely this time of year.
I wanted to make these for Christmas, but I never got around to it. They look ooey gooey delicious!
