Food for Fun: “Unbelievably Good” Chocolate Chunk Cookies

After all my Christmas baking I was going to take the entire month of January off from baking cookies.  Then I got measuring spoons in my stocking.  Then my friends came to visit.  Then I cooked them dinner.  Then I had a coupon for Ghirardelli chocolate chips. 

Long story, short:  I baked cookies on January 1st.  Yeah, that resolution just wasn’t meant to be.

These cookies were so worth it.  I even cheated on the directions a little because I was at MSB’s house and didn’t have an electric mixer.  So, I melted the butter a little and mixed by hand.  These were still amazing and very easy.  They were perfect out of the oven and still great the next day.

I’ve been tempted to just eat easy meals lately and I’m not sure if I want to continue the Bittman Challenge, although I might continue at a slow pace.  I am, however, cooking lunch today so that I have a healthy recipe to put on here instead of just “Fun.”

  • These look good. I want to try Bittman’s Chocolate Chip cookies in “How to Cook Everything.” He says that chocolate chips aren’t good enough chocolate for his cookies so he uses bars…I want to taste the difference.
