Food for Fuel: Chicken Cutlets Roasted with Tomatoes
Something healthy in between cookie recipes….
I made a recipe from How to Cook Everything for lunch yesterday, but it’s not in the Bittman Challenge because it’s not one of his “essential” recipes. Still, chicken was on sale and I’m done with the Poultry chapter, so I had to venture away from the challenge. The recipe is online here. Scroll to the second recipe.
I followed the recipe, but had to use dried parsley and canned tomatoes. Still very good with a nice amount of spice.

I had leftover brown rice in the fridge, so I softened some onions in a skillet, added the rice and a scoop of Brummel and Brown and let them warm up. Next I added some baby spinach and stirred until it was slightly wilted.
It was a nice, healthy lunch, which is great because I ate pizza and cookies for dinner while watching the Longhorns. Comfort food was necessary.
