Food for Fun AND Fuel: Buckwheat Chocolate Chip Cookies
First, I loved your comments on my last post. I loved them so much that I’m going to share a new cookie recipe with you even though I am sleepy.
Second, I accidentally bought buckwheat flour. Don’t ask, because it’s not a very interesting story. It did lead to this fun baking experiment though.
I looked up buckwheat flour recipes and didn’t find very many. However, I did discover that it’s gluten-free and high in protein and whole grains, so it’s awesome for you. I decided I should junk it up with some chocolate chips.
I found a vegan cookie recipe to use as a base. I changed it so much that I’m not going to bother linking to the original. Mine recipe isn’t vegan, but it would be if you used carob chips or dried fruit instead of the Ghirardelli Bittersweet chips that I used.
The downside of buckwheat flour is that it has a strange consistency when used in dough. It’s sticky and kind of glue-like. Luckily that odd texture does not translate into the baked cookies themselves, but it makes them a little difficult to form. It’s also an ugly color–kind of grayish.
And so these cookies were surprisingly delicious. The chocolate and banana flavors dominate.
Gluten-Free and Could-Be Vegan Buckwheat Chocolate Chip Cookies
Makes 15-18 cookies
1 1/4 cups buckwheat flour (I used Hodgson Mill)
1/4 teaspoon sea salt (or just regular salt)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup sugar
1/3 cup maple syrup (I used the crappy fake light kind)
1 overripe banana, mashed
1 1/2 teaspoons vanilla
1/2 to 1 cup chocolate chips or carob chips
Preheat oven to 350*. Mash the banana in a large bowl. Add maple syrup and vanilla and mix well.
In a separate bowl, mix together flour, salt, baking powder, baking soda, and salt. Add to wet ingredients and stir to combine. Stir in chocolate chips.
Drop by rounded tablespoons onto cookie sheet. Dough may be difficult to handle. Bake for 9-11 minutes.

I did an hour on the elliptical before work this morning. Still unsure if it’s enough rest for my knee because my hip flexor and leg were a bit tight afterwards.

oooh those look really good. i didn’t know buckwheat is high in protein! cool! i had buckwheat pancakes this morning a la the diner. but it’s a hippie-crunchy diner that has lots of vegetarian alternative options. this pancake recipe is one of them- dairy free, etc. i think it’s french.. “ployes”. anyway- made with bananas and blueberries= amazing. tho choc chips would be pretty darn good
