Food for Fuel: Very Green Stir-fry
I did 65 minutes on the elliptical today. I got almost as sweaty as running outside in the heat. I did a little strength training at work yesterday afternoon, but I feel like I’ve been slacking on that overall.
Very Green Stir-Fry
1 block firm tofu, sliced
Brown rice, cooked
~1 cup chopped broccoli
3 scallions, chopped
1 handful baby spinach
1/2 Tablespoon minced garlic
1 Tablespoon rice vinegar
1 1/2 Tablespoons hoisin sauce
1 Tablespoon water
Cooking spray or oil
Handful chopped peanuts
Heat oven to 425*. Place slices of tofu on baking sheet and bake for about 30 minutes, flipping halfway. Set aside and chop up some of the baked tofu for use in the stir-fry. You can skip this step and fry tofu with the broccoli, if you want.
Heat skillet over medium-high and spray or add oil. Add broccoli and garlic, cooking for about 5 minutes. Add white parts of the scallions and the vinegar. Stir constantly until vinegar evaporates.
Add tofu, hoisin sauce, and water. Stir for a minute or two, then turn off heat and add spinach and green parts of scallions. Stir until they wilt. Top with peanuts and serve over brown rice.

Not bad! I always bake the whole block of tofu in slices and make a cup of brown rice and only eat about 1/3 of each. That way I can make impromptu stir-fries with the leftovers on another day.
Milo has become increasingly violent. Today he tried to climb up my leg.

You would think he would have attacked those pink slippers instead.
